
We all need some comfort food once in a while—or maybe more than once in a while.
Today’s dish certainly qualifies. I call it comfort chicken spaghetti. My sister gave me the recipe after she saw it on Facebook, and I tweaked it to fit my family’s taste.
My friends also request this when we have potluck dinners, so this is well-tested and approved. I literally have not had any complaints about it.
Here are the ingredients you’ll need:
- 1 lb boneless, skinless chicken breasts
- 1 lb Velveeta cheese
- 1 can Rotel tomatoes (regular or hot)
- 1 lb spaghetti pasta
- 1 stick of butter
- 1 can undiluted cream chicken soup
- 1 can undiluted cream mushroom soup
- 1 medium chopped onion
- 1 chopped bell pepper (red or green)
- Salt and pepper

I should note I do certain tweaks to the recipe at times, such as brown the chicken chunks in a skillet for more flavor and boil the noodles in chicken stock and a tablespoon of chicken base.
I usually garnish this with freshly grated parmesan cheese and serve with a salad and hot garlic bread. Enjoy!
