Everybody needs more quick lunch options, so I’ve got one for you today. It should take you no more than 15 minutes to make.
This one actually works for breakfast, too, for you creative types. It’s a little twist on the old Reuben sandwich.
Here is what you will need:
- Thin-sliced corned beef
- Seedless Rye bread (marbled or non-marbled)
- Sauerkraut
- Thousand Island dressing (make your own: two parts mayo, one part ketchup)
- Provolone cheese
- Egg
