
The world is not short on great cookie recipes, but too many are complicated. We’re all short on time, so that’s why I think you’re going to love today’s recipe.
All you need to do is find five minutes for prep time.
I should note this is the first recipe to come from a listener to the podcast. Someone asked me to try her diabetic-friendly peanut butter cookie recipe, and wow, I’m glad I did.
Here’s the short list of what you will need:
1 cup of peanut butter
½ cup of sweetener (try monk fruit)
1 egg with yolk (or just 2 egg whites)
¼ tablespoon baking powder (don’t mistakenly use baking soda—it will not end well)
