
Guess what? Memorial Day is just around the corner!
I’ve got the perfect recipe to help you get ready. I actually saw this one on Pinterest and have used it a few times now.
There are many excellent potato salad recipes out there—some pretty elaborate—but if you want to keep it simple, you’ll need mayo, potatoes, and hard-boiled eggs.
I like the red skin potato variety. They boil up the best. And keep the skin on them!
The dressing for this is a quick mix of mayonnaise, chives, milk, apple cider vinegar, salt, mustard and pepper. It’s just a matter of whisking it together and mixing it into the potatoes.
You don’t have to add the eggs if you don’t want to, but they add an incredible creaminess to the whole dish.
Here are the ingredients I recommend (serves about six people):
- 6 medium potatoes (quartered)
- 3 hard-boiled eggs
- 1 cup mayo
- 2 tbsp chopped chives
- 1 tbsp milk
- 1 tsp apple cider vinegar
- 3/4 tsp salt
- 1/2 tsp ground mustard
- 1/4 tsp pepper (optional)
Once you have all the ingredients, you’re a few minutes away from a great addition to your Memorial Day feast! I recommend preparing it the night before.
