My Foodie Recipe: Grilled peach cake

Memorial Day weekend is upon us! Along with the unofficial start to summer—although it seems to me we could just go ahead and make it official.

People associate all sorts of good food with Memorial Day, including potato salad, so last week’s recipe is a perfect addition.

Barbecue is another staple, along with just about anything else you can grill. And you can’t forget deserve, right? So let’s combine those two for today’s recipe: Grilled peach cake.

Here’s what you will need:

  • 2-3/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1-3/4 cups firmly packed light brown sugar
  • 2/3 cup butter
  • 2 eggs
  • 1/2 tsp pure vanilla extract
  • 2 tbsp sour cream
  • Icing and topping
  • 4 ripe but firm peaches
  • 1/2 package (4 oz) cream cheese
  • 3 cups confectioners’ sugar
  • 1 cup chopped toasted pecans

This is a longer list than most of our recipes, and you’ll need to allow ample prep time—but the result is worth it. Trust me.
