With over 140 different restaurants, shops, salons and even vet clinics featured on the Butler Plaza shopping center’s website, it’s easy to miss the new offerings popping up.
Butler expanded last year with local favorites like Pepper’s Mexican Grill & Cantina and national retailers such as lululemon, Victoria’s Secret and sister company PINK.
Over halfway through 2026, here are Butler’s six newest stores open for business and three more coming soon.
Jeff’s Bagel Run
Status: Opening July 29
Address: 3254 SW 35th Blvd.
Hours: 6:30 a.m. to 2 p.m. daily
The southeast-focused chain known for bagels and cream cheese made from scratch announced a soft opening July 29 through Aug. 2. Jeff’s announces a weekly lineup of signature bagels and serves cookie bars, refreshers, Jeff’s Jolts infused with Red Bull, and hot and iced coffees and teas.
Jane + Mercer
Status: Opened July

Hours: Sunday noon to 6 p.m., Monday through Thursday 10 a.m. to 8 p.m., Friday and Saturday 10 a.m. to 9 p.m.
The contemporary fashion boutique boasting “Elevated styles. Not prices” opened its third location and first outside Connecticut in Butler Plaza this month with a ribbon cutting by the Gainesville Chamber of Commerce. Jane + Mercer aims to offer affordable women’s and men’s apparel along with home décor.
Cheddar’s Scratch Kitchen
Status: Opened May

Hours: Sunday 11 a.m. to 10 p.m., Monday through Thursday 11 a.m. to 10 p.m., Friday through Saturday 11 a.m. to 11 p.m.
The casual dining restaurant is known for made-from-scratch American favorites like honey-butter croissants, soups, hand-battered chicken tenders, slow-smoked baby back ribs, burgers, steaks and seafood.
Buckle
Status: Opened in February

The retailer is a one-stop shop for more than 200 brands, including Free People, Sorel, Oakley, Levi’s, Billabong and HEYDUDE for a wide variety of men’s and women’s apparel and accessories.
American Eagle
Status: Opened February

Located across from its sister brand, Aerie, the national outfitter founded in 1977 aims to offer a wide range of everyday essentials including jeans, casual tops, outerwear and accessories for men and women.
Bon Chon
Status: Opened January

The South Korean fried chicken’s Gainesville location is one of nearly 500 around the world. Founded in 2002 in Busan, South Korea, the name “Bonchon” translates to “my hometown, my roots.” Bonchon’s menu offers hand-battered and double-fried chicken strips, wings and drumsticks brushed with a variety of sauce flavors. They also serve traditional Asian starters and main dishes such as pot stickers, fried rice and kimchi.
